Chicken Alla Marcello

This dish will take plus or minus 30 minutes
to prepare and will feed 2-3 persons


Ingredients:

  • 2 Boneless and Skinless Chicken Breast
  • 3 TBS. Extra Virgin olive oil
  • 1 Lemon
  • 2 TBS. Non peril cappers
  • 3/4 cup of white dry Vermouth or dry white wine
  • 1 tsp. chicken base (you may sub chicken bullion, however dilute in ¼ cup of water first)
  • 4 TBS. Flour
  • ½ Tsp. Granulated Garlic
  • ¼ Tsp. White Pepper (OK to sub Black)
   Trim access fat and skin from the breast than gently place palm of your hand on the breast (one at a time), with a sharp knife spilt breast in half. Do same with other breast, you now have 4 half chicken breast.In a plate or plastic bag mix the flour, granulated garlic and pepper. Once this is done coat the chicken breast of both side and place on side.

    Place a pan over medium heat and add the extra virgin olive oil. When oil is hot add all 4 of coated breast and cook for 4 minutes, add ½ of the lemon. Turn the breast over, add the other half of the lemon, the cappers, the white Vermouth or dry white wine and the chicken base.

    With a fork move the breast around the pan so that all the ingredients will incorporate into the chicken. Cook for 3-4 minutes and the meal is ready.You can serve this meal with any shape of pasta or rice. You should have plenty of sauce from the cook chicken breast to complement the dish.

    I prefer to use a chicken Base (which will add an unbelievable flavor) that does not have salt as the first or second ingredient. I also like to use a good quality of granulated garlic over any other type of garlic.

    In case you don’t have enough sauce for the pasta or rice, sauté fresh garlic and olive oil, add to pasta or rice with a grated Romano (my first choice) or Parmigiano, For vegetable use either Green Beans or Peas.
